  The most important ingredient in cheesecake is of course cheese. There are several different types widely used, cream cheese, Neufchatel, cottage cheese, and ricotta.

 
  • There is a museum in Belgium just for strawberries
  • Lemon trees grow to be about 10 to 20 ft tall and are sparsely
     covered with foliage.
  • The Navel Orange, so named for their "belly button" at the blossom end, were discovered in the 1820'
  • Lime is also called, Citrus aurantifolia 
  • Mangos were introduced to California (Santa Barbara) in 1880.

  • In 1493 Columbus found the pineapple fruit on the island of Guadaloupe and carried it back to Spain
  • Compound fruit, pineapple,  develops from many small fruits fused together. And are up to 12 in. long and weigh 1 to 10 pounds or more.
  • Pineapple plants require a frost-free environment, cold weather effects the quality of it's fruit.
  • Kiwifruit is saturated fat-free, sodium-free, and cholesterol-free
  • The kiwifruit is native to the Yangtze River valley of northern China and Zhejiang Province on the coast of eastern China
  • Kiwi plants were first exported from China to the United States in 1904, and seeds were brought to New Zealand in 1906. 
  •  A Florida juice fruit, the tangelo, was produced by the fertilization of grapefruit flowers with mandarin orange pollen.
  • There are two main varietiesof grapefruit, Ruby Red and Marsh White
  •  A cross between a sweet orange and a pummelo is the Grapefruit
  • Limes were fed to British sailors as a scurvy preventative.
  • Stevia is a South American herb that is 30 times sweeter than sugar
  • Stevia is calorie free and has a zero glycemic index.
  • Stevia is is safe for diabetics and hypoglycemics
  • Stevia effectively regulates blood sugar and brings it toward a normal balance as research indicates.
  • Stevia leaves contains glycosides known as steviosides. Steviosides include rebaudiosides, which are the sweetest compounds in the leaf.

 1000 A.D. -Cheesecakes were introduced to Great Britain and Western Europe by the Roman conquering armies. By 1000 A.D., cheesecakes were flourishing throughout Scandinavia, England, and northwestern Europe. (documented and reference to author Linda Stradely of  What's Cooking America. )
